Salmon Spread - A Favorite Entertaining Appetizer

A delicious appetizer that is easy to make for at home entertaining, or to take to friends' holiday functions.

Ingredients

  • 8 ounces salmon filet boneless and skinless
  • 3 Tablespoons fresh lemon juice
  • 2 Tablespoons extra virgin olive oil
  • sea salt & freshly ground pepper to taste
  • 2 Tablespoons crème fraîche
  • 1 Tablespoon dill minced
  • 1 medium shallot minced
  • 1 whole lemon zest

Instructions

  • Preheat oven to 375 F. degrees.
  • Place salmon filet on a small baking tray.
  • Drizzle with 2 Tablespoons lemon juice, olive oil, salt, and pepper.
  • Bake 15 minutes until cooked through.
  • If salmon has skin, remove and discard. Set salmon aside until cool.
  • Place salmon in a bowl. Using a fork, flake until chopped into pieces.
  • Add crème fraiche, dill, shallot, remaining lemon juice, and zest. Blend together.
  • Season to taste with salt and pepper.
  • Refrigerate until ready to serve.
  • Spread on crackers or cucumber rounds. Garnish with a few flakes of sea salt and dill.
  • Serve.
