Salmon Spread - A Favorite Entertaining Appetizer

salmon filet
boneless and skinless

fresh lemon juice

Tablespoons
extra virgin olive oil
sea salt & freshly ground pepper
to taste

crème fraîche
1
Tablespoon
dill
minced
1
medium
shallot
minced
1
whole
lemon
zest
Instructions
Preheat oven to 375 F. degrees.
Place salmon filet on a small baking tray.
Drizzle with 2 Tablespoons lemon juice, olive oil, salt, and pepper.
Bake 15 minutes until cooked through.
If salmon has skin, remove and discard. Set salmon aside until cool.
Place salmon in a bowl. Using a fork, flake until chopped into pieces.
Add crème fraiche, dill, shallot, remaining lemon juice, and zest. Blend together.
Season to taste with salt and pepper.
Refrigerate until ready to serve.
Spread on crackers or cucumber rounds. Garnish with a few flakes of sea salt and dill.
Serve.
